Holiday Baking Day has been one of my very favorite traditions since I was a little girl! We have baked Christmas-themed treats every year for as far back as I can remember! With limited space in our RV, and four very fast little hands in the kitchen, we decided we would have to amend baking day in order to keep our tradition alive and well.

I was worried about how I would do this. But fear not, my fellow RV holiday hams, I am here to tell you that I scoured Pinterest, dove into my family recipe book, drank lots of coffee (also mimosas) and exercised my creativity to come up with a list of treats for all to make and enjoy! In my head I hear cheering here ... Christmas Cheer-ing, perhaps?

Holiday Recipe Criteria for our RV Kitchen

I based the recipes I chose on these criteria:

  • Small-space friendly
  • No oven needed
  • Relatively cheap
  • Easy, fun, and good for kid attention spans
  • Cute (obviously)

I also like to prep the area and set up all of the treats without the helpers in the kitchen, because we are here to have fun, and this isn't a week-long project. ;) So, I made a section for each type of treat before getting started: fruity treats, hot cocoa stirrers, and cookie pops.

So, here you have it - my no-bake, easy-to-make, holiday treats!

1. Grinch Santa Fruity Treats

The guy's heart grew three sizes and now he loves Christmas. So, let's put a Santa hat on him to celebrate! Plus, the new movie is out and if there's one thing I love, it's being SUPER festive and tying treats into our activities. Come be 'extra' with me - these are the easiest things to make EVER!!!

You will need:

  • Toothpicks
  • Green grapes
  • Bananas, sliced
  • Strawberries, with the green stem cut off
  • Mini marshmallows

Directions:

Stick the toothpick into the top of the green grape, next slide the banana slice on, then the strawberry (pointy end up), then the mini marshmallow, and you have your Grinch Santa! It takes minutes and they are so cute.

2. Strawberry Santa Fruity Treats

Do you love Strawberries? Do you love icing? Do you love strawberries AND icing? Then you definitely love Strawberry Santas!

You will need:

  • Whipped white icing in a piping bag with a Wilton 14 tip or similar
  • Strawberries
  • Some mini chocolate chips

Directions:

Once you've collected the ingredients, you are ready to make a BERRY adorable Santa! Just don't devour them all before you show them off. Also, I definitely had to Google the name of the tip I use in my piping bag, so just find the one that looks like it would make those grocery store cupcakes with the five-prong tip and get going!

Cut the green stem off the strawberry, leaving as much red area as possible. Then, cut the top point off the strawberry to become Santa's hat. Now you have a piece of the strawberry to use as the base and another for the hat.

In a piping bag filled with whipped white icing, pipe icing onto the base strawberry, place the strawberry hat on the icing and then pipe a small poof of icing at the top to complete Santa's hat.

Place tiny chocolate chips in the icing in the middle for Santa's little eyes, and you have a complete Strawberry Santa!

3. Melting Spoon Hot Cocoa Stirrers

Hot cocoa stirrers are simple, really quick, and perfect for holiday parties. Just stir them into hot cocoa for an extra yummy treat!

You will need:

  • Red or festive plastic spoons
  • Chocolate chips or white chocolate chips
  • Holiday sprinkles!
  • Make sure to also have a cookie sheet with edges and cover it with parchment paper

Directions:

Melt your chocolate chips in the microwave. (Pour them into a microwave safe bowl, microwave for 30 seconds and then stop and stir. Repeat until chocolate is melted).

Dip your plastic spoons into the melted chocolate, wipe the bottom of the spoon off for a clean look, set the spoon onto the cookie sheet with parchment paper. (Make sure to level the spoon using the edge of the cookie sheet, so that no chocolate spills over the sides. But, if it does, that is completely ok!) Decorate the chocolate with your holiday sprinkles and chill in the fridge for an hour or until it is time to serve with hot cocoa!

4. Marshmallow Cane Hot Cocoa Stirrers

These are another fun addition to hot cocoa that are easy to make!

You will need:

  • Jumbo marshmallows
  • Mini candy canes
  • Chocolate chips
  • Cookie sheet covered with parchment paper

Directions:

First, unwrap your five million, individually-wrapped, tiny candy canes -- unless you were a genius and found them unwrapped in bulk. Where are these?!? Choose the 15 or so you accidentally broke while you were unwrapping them, had a weak moment of frustration, or an over-zealous helper in the kitchen. Then put them in a baggie and pound them to bits! Not too hard, this isn't therapy. We need the pieces to be small, but not pulverized. HA! Pour these into a bowl and set to the side for dipping and decorating.

Take your marshmallows and push a mini candy cane into the top center of each one. We will call these your unfinished marshmallow canes.

Melt your chocolate using the instructions from above. (Tip: If your chocolate is too thick, add one teaspoon at a time of coconut oil into your chocolate, stirring and mixing it in completely until you have a creamy, but not thick consistency for dipping).

Take your unfinished marshmallow canes and dip the bottom of the marshmallow into the chocolate. Go about 1/3 up the bottom of the marshmallow. Or if you're all about that chocolate, just go ahead and dip it half of the way up. I fully approve of this half dip. Let the chocolate dry for a second and stop dripping, then roll the chocolate portion of the marshmallow cane in the crushed peppermint.

Set it onto the cookie sheet with parchment and chill for an hour or until you are ready to serve!

5. Cookie Pops

These are one of my favorite things ever! You can make your own cookies, but I grab double stuffed Oreos or Glutino Creme-Filled Cookies from the store. Save yourself some time, friend!

You will need:

  • Lollipop or cake pop sticks (I got mine at Michaels)
  • Oreos or Glutino Creme-Filled Cookies
  • Chocolate chips
  • White chocolate chips
  • Eye candies
  • Red sprinkles
  • Christmas Mini M&Ms
  • Red hots (optional)
  • Rolos or peanut butter cups
  • Pretzels (not the sticks, the actual pretzel-y kind ... hope that's not too technical for you. We do keep it very formal around here.)

Directions:

Melt your chocolate. Stick a cake pop stick into the creme of your cookie and dip your cookie into your chocolate. (Remember, you will want the chocolate a little thinner, so that you don't get your cookie stuck in chocolate jail. We have lost a lot of good cookies to thick chocolate...) Set it aside onto a flat cookie sheet covered with parchment paper.

Now you have limitless options for decorating. You can make Santa, Rudolph, Ornaments, or any creative idea you may want to throw in! My son wanted a snow monster cookie. It was cute, and he LOVED decorating it ... and devouring it.

  • Santa: White chocolate, red sprinkles for his hat, eye candies for his eyes and one upside down for the white ball at the top of his hat.
  • Ornament: White chocolate or chocolate, Rolo or Peanut Butter Cup for the top, and M&Ms or holiday sprinkles for decoration.
  • Rudolph: Chocolate, eye candies, either a red M&M or red hot for his nose, and broken pieces of pretzel that look like antlers.

So, there you have it -- no-bake holiday treats. Simple, fun, and RV-friendly -- pick one or a few and spread the cheer!
