Okay I'll admit it. On RV trips, James and I are worthless in the mornings. We sleep in, sip coffee, and remain completely unproductive. We loll around the RV being as lazy as we can possibly be, savoring the feeling of having nothing on our To Do lists.

It's a complete change from our REAL mornings when we're not traveling. Thanks to those pesky day jobs, we both get up early and move quickly, rushing through our morning routines so we can get to work.

So knowing about this lazy problem of ours, it probably doesn't surprise you that our RV breakfasts, which fall during our window of slothfulness, are all about simple. And tasty, too. And of course we can't leave off healthy; as no matter where we are, that's always our #1 priority.

Which is where mug recipes come into play. You might have already seen our Turkey Spinach Omelet in a Mug recipe on The Fit RV website. Mug omelets are a big hit with me and James, and they meet our criteria for breakfast on the road: simple, tasty, and healthy. So, friends, today I'm letting you in on another mug breakfast favorite of ours: French Toast in a Mug.

French toast was one of my all-time favorite breakfasts growing up. Sorry you pancake fans, but they don't hold a candle to French toast. I think it's mostly a texture thing...is there anything better than that custard-like center and the way it melts in your mouth? As a health-conscious adult, French toast became more of a rarity for me. There's high refined sugar content in traditional French toast, lots of carbs, and when getting it at restaurants, there's that mystery oil being slopped on the griddle and sponged up into the bread. So, I tended to avoid it.

But, gang, that's the beauty of this recipe! There's no additional refined sugar and no oiled up griddle. Plus you prepare it, cook it, and eat it all in the same fabulous mug! SO we've got simple, and we've got healthy. Check!

But what about tasty? I actually think French toast in a mug beats traditional French toast in the taste department. I really do! You know that melty gooey French toast center? When you make it in a mug, the ENTIRE MUG has that same texture. Now every bite can be awesomeness in your mouth, instead of just the one bite you get in the very center of your piece of French toast. Once you make this recipe you'll say this: "Where've you been all my life, Mug French Toast?"

I know you will.

French Toast in a Mug

Ingredients:

  • 1 teaspoon butter (to coat the inside of the mug)
  • 2 slices whole wheat bread
  • 1/2 cup milk
  • 1 large egg
  • 1 TBSP maple syrup (or sub 1 packet Stevia)
  • 1/8 tsp salt
  • 1/8 tsp ground cinnamon
  • 1/4 tsp vanilla extract

Instructions:

  1. In a large mug, melt the butter in the microwave and brush it around the sides.
  2. Add the milk, vanilla, cinnamon, and salt to the mug. Stir well.
  3. Whisk in the egg and maple syrup (or Stevia) until very well blended.
  4. Cut the bread into small bite-sized cubes, and then add to the mug. Stir thoroughly and press the cubes down to absorb the liquid.
  5. Let stand for a few minutes so the bread has more time to absorb the liquid. Before cooking, give the bread another stir and make sure it's all pressed down into the liquid.
  6. Microwave on high for 90 seconds to 212 minutes (check after 90 seconds) or until firm to the touch and liquid is absorbed. NOTE: This will swell over the rim of the mug when cooking, that's normal. If it gets too high, it helps to stop the microwave for a few seconds to let it settle back down. And make sure you're using a large mug!
  7. Top with your favorite French toast toppings, and enjoy!

Prep The Night Before Option:

  1. You can actually prepare these the night before, doings steps 1-4 above, and then covering until morning when you're ready to pop them in the microwave. They work great this way!

That's all there is to it...and since you didn't dirty any extra bowls or pans, clean-up is easy peasy.
